Arugula and Basil Salsa Verde

You can garnish your crackers, toast, eggs, or even add this unique salsa to your quinoa.

Ingredients

2 plum tomatoes, or a handful of cherry tomatoes, chopped
Finely grated zest of 1 small lemon
1 garlic clove, finely chopped
1/2 cup Wispy Arugula Microgreens
1/4 cup of Wispy Opal Basil Microgreens
1/4 cup coarse fresh breadcrumbs
1 Tablespoon red wine vinegar
1/2 cup extra virgin olive oil
1/4 cup finely grated Parmesan Cheese

Instructions

Mix tomatoes, lemon zest, garlic, arugula, basil, breadcrumbs, and vinegar in a small bowl.
Using a wooden spoon, slowly mix in olive oil.
Slowly mix in Parmesan.
Pour a little bit of olive oil on the surface to keep salsa from discoloring.
