Peanut Chicken & Noodles with Microgreens

Peanut Chicken & Noodles with Microgreens

Feel and look like a pro when you cook this chicken and noodles dinner with the popular taste of peanut sauce.

Sauce Ingredients

  • 1/2 cup Peanut Butter 
  • 1/2 cup Hot Water
  • 2 Tablespoons Soy Sauce
  • 2 Tablespoons of Sugar
  • 2 cloves of garlic, minced
  • 1 Teaspoon of Apple Cider Vinegar

Main Ingredients

  • 1 lb of chicken breasts, cut into strips
  • 2 packaged servings of Ramon Noodles
  • 1/4 cup of peanuts, chopped
  • 1/2 cup of Wispy Veggie Microgreens
  • 1/4 cup of Green Onion, chopped
  • 2 Tablespoons of sesame seeds

Instructions

  1. Combine peanut butter and hot water and whisk until uniformly mixed.
  2. Stir in remaining sauce ingredients and mix well.
  3. Set aside.
  4. Cut chicken into strips.
  5. In small bowl, combine 1 1/2 cups of peanut sauce with the chicken to marinate.
  6. Place in refrigerator for 1-2 hours.
  7. Preheat oven at 350 degrees
  8. Place chicken strips onto lightly greased baking sheet.
  9. Cook for 5 minutes.
  10. Use a pair of tongs or a fork to flip each strip over, and cook for 5 more minutes, or until the chicken measures 160° inside.
  11. Cook Ramon Noodles according to package directions.
  12. Drain the noodles and mix them with the remaining 1/2 cup of peanut sauce.
  13. Plate your noodles and add chicken strips on top.
  14. Top chicken with Wispy Microgreens, peanuts, green onions and sesame seeds.

Substitutions

Substitute the chicken with tofu. Substitute the Red Cabbage with Microgreens. You can also add Sunflower Shoots for a more fresh and crisp crunch!
