Wispy Greens Salad with Homemade Lemon and Basil Dressing
All you have to do is reach into your pantry and refrigerator for the ingredients in this fresh and summery flavored dressing for your Wispy Greens salad.
Salad Ingredients
- Wispy Greens Lettuce
- Wispy Sunflower Shoots
- Wispy’s Spicy Salad Microgreens
- Red Onion (optional)
- Butter Beans
- Red cherry tomatoes, halved
- Pine nuts
Dressing Ingredients
- 1/3 cup fresh basil leaves
- 2 Tablespoons plus 1 teaspoon of lemon juice
- Salt
- Fresh ground pepper
- 3 teaspoons honey
- 6 Tablespoons extra virgin olive oil
Instructions
- Toss salad ingredients in a bowl and set aside
- Place basil in a mini food processor and pulse until finely chopped
- Scrape down the sides
- Add lemon juice, salt, pepper, and honey and pulse until combined
- Scrape down the sides and then add the olive oil and process until emulsified.
- Taste and adjust honey and salt to desired taste.
- Pour the dressing over the beans and vegetables and toss gently to coat. Serve.
- Serve right away to preserve color.
